Grape variety and production zone
100% Glera (ex Prosecco) from the comune of Cison di Valmarino – Subzone Rolle,
location Piai Orientali.
2,65 hectare vineyard” Piai Alto” in production since 1945. Average age of the vines is 30
years. Land of glacial origin with the presence of marine sandstone and marl dated back
to the Miocene.
Altitude 270 – 330 masl.
Growing method and yield
“Double arch” ( Cappuccina ) with 4.000 vines/hectare and a grape yield of
13.000kg/hectare and 6 kg per vine
Period of harvest Between the 20th and 29th September 2012
Structure and chemical/physiological characteristics
Ph acidic liquid composed of water, ethyl alcohol, superior alcohol, sugars, extracts,
acids, salts, metals. Pressure of 4.50 –5.00 bar at 20° C.
Technology used during vinification
White vinification with soft grape pressing. Sparkling procedure in pressurised vats with
the addition of partially fermented grape must, sugar substances and additives. Prise de
mousse at 20° C and successive fermentation at 13° – 14 ° C for a duration of 40 days.
The sterile bottling process follows a stabilisation at (-4°C) with filtration. Further
refinement in the bottle for 2 months.
